5 Second Tuna Salad Recipe and August Birchbox

Last night I was super hungry after getting off work. Like so hungry I think I drove faster home than normal. I knew I didn't want to wait for anything to cook nor did I want to pick up take out. So I went to my go to, quick meal. Literally takes 5 seconds and it is so filling. Can you guess?? Yeap tuna salad. I just love it!

What you will need
tuna (in water not oil)
miracle whip
mustard
garlic salt
crushed red pepper
chopped up mini pickles
 
Mix it all together and top your salad with some reduced fat sharp cheddar cheese.

I will be doing my workout after work today because I want to run outside to prepare for tomorrow's 5k and let's just say I don't live in the safest place to be running at 6am.
 
Like I have said I will be traveling to Charlotte to run a 5k with my wifey. Can't wait to see her and her daughter and get my running on!!

Motivation & Lean Legs Workout

This weekend I am doing my 2nd 5k with my best friend from college. I am super excited to run another race but I am pretty excited to see these two. The memories that we have could literally last a lifetime but the new memories that we are making including her daughter I wouldn't change for the world. Looks like the two of us finally grew up.....well maybe just a little:)
 
 
Yesterday morning I wasn't feeling very motivated to go to the gym so I did what I hate doing and rolled back over and got another hour of sleep. What I should have done is remember this sweet face for my motivation.

 
So if you are ever need motivation or try to find an excuse for not working out, remember him!
 
This morning I did just that and headed to the gym.
 
I did a quick run on the treadmill for warm up and then started my new lean legs workout. All I can say is holy squats!
I then cooled down with 10 minutes on the bike on fat burning level.
 


Honestly the best feeling I get is after a good workout. It calms me, gives me time to think and most of all tones my hiney:) haha
 
 
Day 208:
Breakfast: 2 eggs with sugar free syrup
Snack: 25 almonds
Lunch: left over skinny sirloin meatloaf with steamed broccoli with a sprinkle of fet and balsomic vin.
Snack: side spinach salad with low fat yogurt dressing
Dinner: tuna salad with spinach and reduced fat cheese and grapes. (icy pop)

9/11 Remembrance

Today may everyone remember all the military, police, firefighters and all the others that lost their lives on this day and be thankful for all the military, police and firefighters that serve or have served so that we can live in the best place in the world. I am blessed to have a Veteran/hero in my everyday life.

A few weeks ago I made a healthy southwestern meatloaf and it turned out quiet delish. So last night I decided to make a traditional healthy meatloaf. It is so funny that I actually eat meatloaf. I had never had it a day in my life until I met the bf and when I first saw it I was definitely not into it. I didn't understand why people would eat just meat and ketchup. Oh but it is so much more than that:)
 
What you will need
 
Lean sirloin beef
1/2 onion (chopped)
1/2 cup of oats
McCormick's meatloaf packet (low sodium)
reduced sugar ketchup ( I swear you can't tell a difference, you decided how much you want)
crushed red pepper
oregano
garlic salt
2 eggs
 
Preheat oven 375'

 
Mix everything in a large mixing bowl
 
 
Then place in baking dish and bake for about 30 minutes (or until browned, check middle)

 
Add ketchup to the top (this looks like I used a lot of ketchup but it was just a thin layer)
Then bake for another 15ish minutes.
Once again check the center to make sure it is fully cooked all the way through.

 
I then enjoyed my very Southern meal.
Skinny Sirloin Meatloaf with a side of cabbage.

 
 
Day 207:
Breakfast: eggs with salsa
Snack: 25 almonds
Lunch: the rest of my tuna bake and a side of sweet potato noodles and marinara sauce.
Snack: go to bar.
Dinner: leftover meatloaf and cabbage with a side salad with low fat yogurt dressing. (icey pop)

New Workout and Tuna Bake

 
I wanted to start with a new workout this morning. The running part isn't so new but I like to switch up what I do after my run so that I don't get bored and I also want to make sure I work all parts of my body. With this one I could I definitely feel it in the abs.


Now to the yummies...

On Sunday when I got back from the bf's parent house I stopped by the grocery store to pick up some things I would need throughout the week. I was in a tuna mood so I decided to try something new.  It ended up being quiet tasty. If you are a tuna lover this is a must try. But words to the wise don't cook and light pumpkin candles at the same time. It will make your home smell quiet funky.

What you will need
2 large cans of tuna (in water)
miracle whip
fat free cottage cheese
part skim mozzarella cheese
2 eggs
onion
pepper (any color you like)
hot sauce


 
Start by preheating your oven to 375'
 
Chop your onion and pepper.

 
Then mix all ingredients in large bowl and  pour in baking dish..
I used about 1/2 of the cottage cheese container
a handful of mozzarella cheese
1/3 of the onion
1/3 of the pepper
2 tablespoons miracle whip
 
Let bake for about 30 minutes 
 
 
Then top with mozzarella cheese.
Let cook for another 15 minutes (like I always say ovens vary, check in the middle and once the cheese is fully melted)

 
Then let cool and get ready to enjoy!!
With the leftovers I am having it for lunch on a bed of spinach. Another good way to eat it. (and you get more greens ins)

Breakfast; eggs with salsa and hot sauce
Snack: 25 almonds
Lunch: Tuna bake with spinach
Snack: go to bar and edamame
Dinner: Skinny sirloin meatloaf with cabbage and an icy popsicle (last one)

Birthday Parties and Golf

This past weekend I went to the bfs parents house for his little cousin's birthday. It was a Minnie Mouse theme and I would have loved it as a kid. Who am I kidding, I actually still would love the decorations but I think that is just the kid that is still inside of me.
 
When we got to the party the birthday girl was having a blast!


 
After playing for a while it was time fore the kids to eat. How cute were the sandwiches.

 
Then we all gathered around the table while she blew out her candles. You could tell the kids were antsy to have some cake and cupcakes. Nothing better then watching a playground full of sugar filled kids.

 
I think the cupcakes we my favorite part. I heard they were yummy. I stuck with snacking on grapes.

The birthday girl said she is ready to open up some presents!!

The next day the bf, his mom and I decided to go play golf. I got them to stop at the grocery store on the way so I could get a few snacks. I didn't really want to eat a hot dog at the course:)
 
I have never gotten these south beach bars and they were so yummy and full of protein.

 

 
It was a perfect day for golfing. (but it was HOT)

 
After we finished we had Sunday dinner and then headed back.
I love weekends full of family and fun nothing beats them.
 
 
Day 203:
Breakfast: grapes
Snack: beef jerky
Lunch: grilled chicken salad
Snack: 3 pieces of dark chocolate
Dinner: another grilled chicken salad (I love salads ha)
 
Day 204:
Breakfast: 1/2 peach and plum
Snack: go to bar
Lunch: grilled chicken, sweet potato and small piece of corn
Snack: go to bar
Dinner: Tuna bake with a side of sweet potato noodles and marinara sauce with reduced fat cheese.
Dessert: icy Popsicle
 
Day 205:
Breakfast: Egg bake
Snack: 25 almonds
Lunch: Tuna bake with spinach
Snack: go to bar and edamame
Dinner: Thai (chicken and veggies) and icy Popsicle
