April Challenge Day 2 & Baked Taco Soup

Day 2
 
For breakfast I woke up starving so I was ready to get to work and have my usual egg and spinach omelet.
 
Then for lunch I headed across the street and had Salsaritas.
 
I created a bowl with black beans, pintos beans, grilled chicken, romaine lettuce, light cheese, grilled peppers and onions and salsa.
 
 
Around 3 it was snack time!! Yogurt and grapes.

 
After I got home from work I was in the mood to create a new recipe so I stopped by the grocery store and walked around till I made up my mind on what I wanted to make.

 
What you will need
ground turkey
black beans drained
pinto beans drained
Mexican corn drained
rotel tomatoes and green chili's drained
taco sauce
taco seasoning
non fat Greek yogurt

 
Start my lining your baking dish with the black beans and pinto beans.

 
Then cook your ground turkey and add in the taco seasoning.
Then top your beans with the seasoned ground turkey.

 
Then add your rotel tomatoes and green chilies,

 
then a layer of non fat greek yogurt.

 
Top the greek yogurt with the mexican corn,

 
then last the taco sauce.

 
Place in oven (375') and let cook for about 20 minutes.
Then take out and top with reduced fat mexican blended cheese.

 
Let cook until cheese is melted.

 
Once it is cooled. Enjoy and bowl of this healthy, low calorie, low carb Baked Taco Soup.
It heats up well for lunches.

April Challenge Day1

Yesterday it really felt like Spring so I thought I would pull out my bright colors and enjoy. I love everything about it
 
 
Like I mentioned Monday I am doing an April Challenge. I basically am going to be doing what I did when I first started my blog. For the entire month of April I will have no soda, not even diet, no bad carbs and no sugar.
 
So here I go!
 
Day 1
 
For breakfast I had an egg and spinach omelet with hot sauce. No cheese.
 

Throughout the day I snacked on 30 pistachios

 
Then at lunch I had a grilled chicken salad with romaine lettuce, spinach, red peppers, mozz cheese, grilled chicken with balsamic vinaigrette.

 
After work I headed over to hangout with this little man and grill out.

 
For dinner I had grilled chicken , green beans and corn.

 
Throughout the day I really wanted a diet coke but I pushed through. I would say day one was a success, wouldn't you?

My First Bridal Shower & My April Challenge

This past weekend we went to the fiances parents house to stay. On Saturday his Aunts were throwing me my first Bridal Shower.
 
When we arrived at the house I had these two little cuties to welcome me. They are going to be perfect flower girls.
 
 
I can't believe how time is flying by.

 
They decorated the house so cute. I loved all the pictures and the homemade crafts. The entire shower was totally me.
 
 
Of course when we got there the grandmother's had to grab the grand babies first.

 
After we hung out for a little while it was time to do a little snacking. I loved how they had all my favorite finger foods. Hummus, veggies, fruit, nuts and grilled chicken. The theme of the shower was even the theme I am sort of using for the wedding.

 
Not to mention the adorable cups. The best part was I got to keep them.

 
After we ate we played with the kiddos for a while and then
 
 
 
played a few games. Don't we look fabulous?
 
 
Now this little kiddo could seriously pass as my own.

 
But then again her mother and I could pass for sisters.
 
 
Now her other daughter is just as sweet. I can't believe she wasn't even 2 when I met her and next year she will be going into 1st grade.
 
 
Now the next person I bet you can guess who it is. I was so glad my mom was able to come to the shower. She drove all the way from Florida that morning to be there. That is a special momma right there.

 
Last it was present time...yayyyyy...
 
I was told to walk outside to find my first present. I think the finace will enjoy this one the most.

 
We went back inside and I started opening the rest of my presents. I was like a little kid on Christmas morning.
 
Here my mom is explaining the platter my Grammy got for me. I can't wait to get it engraved.

 
I was super excited about our new comforter. It is going to be torture not using it for 2 1/2 more months.
 
 
And of course everyone knows I love cookware.

 
Also I wanted to share these two pictures. The fiances cousin painted them and I am basically obsessed with them.


 
The shower was beyond perfect and it just showed me even more how blessed I am. Thank you to all that helped, I love you all!!
 
Now I am going to share a new challenge I am going to be doing. Starting April 1st (tomorrow) for the entire month I will be cutting out all sodas, sugar and carbs. Basically I will be doing what I did when I first started LittleBlueDress. I will be sharing my meals and workouts daily so I hope you check them out.
