A lot of weekends I have to go out of town for different things so it is always good just to be able to stay home. So Friday night I did just that . The fiance came over to keep me company while I filled out our Save the Dates but he ended up watching the Clemson / USC baseball game very closely.
Miss Motor wasn't much company either. She got spayed and wasn't feeling her best. Bless her.
The next morning we met up for brunch at an amazing French cafe. I had an omelet with turkey sausage, spinach, sun dried tomatoes and light cheese. Also a tasty bowl of fruit. I have a feeling whatever was on top was not very low calorie. So I only had a little of it with my fruit.
After brunch we headed over to the mall to do something I have been VERY excited about.
REGISTERINGGGG!!! I tell ya, there is something about just being able to go through a store and pick out what you want. We were like little kids. But after about 4 hours the fiance had had enough and I'll be honest I had too.
That evening we met up with some friends for dinner.
We had some delicious food and a great time but then decided it was time to head out.
The next morning I got up and had my normal Sunday. After taking a very long nap around lunch time I headed to the grocery store to get what I wanted to cook for my lunch for the week and then headed home to find a good Lifetime movie.
I decided to make stuffed sweet potatoes. I haven't had them in a while and they are always so filling.
What you will need
2 sweet potatoes
ground chicken
taco seasoning (low sodium)
re pepper
fat free greek yogurt (plain)
quinoa
enchilada sauce
skim mozz cheese
green chilies
Start by baking your sweet potatoes at 400'
Then cook your ground chicken. Once chicken is cooked add your taco seasoning, green chilies, red pepper and greek yogurt. Let cook on medium/ low.
Once the potatoes are cooked scoop out the middle of your potatos and add to your meat mixture along with the enchilada sauce. Mix well.
Then pour mixture into potato skins. Top with cheese and let cook for about 15 mins in the oven.
Let cool and enjoy!
I just love weekends like this.
