Who Says Eating Healthy Can't Be Fun?

Yesterday was such a beautiful day. The sun was bright and the blue skies were gorgeous. There is something that always makes me want to grill out when it is a beautiful day, I mean probably everyone that has a grill thinks that. I love just sitting outside and relaxing and just catching up with my hubby and how his day went while smelling the fresh aroma of the grill. Honestly there are not many more things I enjoy more.
 
I have to say one of the reasons I love grilling so much is because there are so many healthy options. You have your chicken, turkey burgers, sirloin steaks, all different types of veggies and some grilled fruits are even quite tasty.
 
So last night I decided to try and make something new and very different.
 
Grilled BBQ chicken, spinach, eggplant pizza.  
 

 
Get ready these things are amazing!!
 
I started by grilling the BBQ chicken.

 
 
The eggplant is going to be the crust of the pizza. So cut it into a circle.

 
 
After that I put them on the grill and let them get nice and crispy.

 
 
After the chicken as cooked I shredded it along with spinach.

 
I then added a light layer of BBQ sauce to the eggplant. Along with the shredded chicken, chopped spinach and light mozzarella cheese and then put in the oven until the cheese melted.

 
 
As my side I baked one of my favorite things sweet potato fries and siracha corn. I will share those recipes next week!
 
Now all I have to say is.....
 
Who says eating healthy can't be fun and VERY tasty!!

Our First Purchase as Hubster and Wifey & Good Eats at Panera

I am pretty excited about this post because I am doing it from our new computer. Yesterday after work the Hubster and I headed over to Best Buy because we were in need for a new laptop. The one we currently had was the one I have had since college and lets just say you could travel to another state before it logged on. So we shopped around and looked at our different options but we finally found  "The One". Of course I wanted a HP laptop since I work for them so we decided to go with the HP Envy. It's the one that is a laptop and tablet in one.

We are not good at taking selfies together. 


We were like two kids in a candy store.

After we bought our new laptop we went across the street to Panera for dinner. We always forget about Panera for some reason and every time we walk in the door it reminds us how we need to come more often. The wonderful smell of the breads, pastry's, cookies, etc, I mean who wouldn't want to go. But the thing I love most about Panera is they have healthy options for me and not so healthy options for the hubster. He is pretty much obsessed with their potato soup. Me, I am not a fan. But I will say that all of these desserts I wouldn't mind to sit back and try them all. 



So tempting!!


For dinner tonight I had their new flatbread sandwiches and a cup of soup.


I have tried most of the flatbreads but there is a new one that I was calling my name tonight.
The BBQ Chicken (360cals)
This had chicken, lettuce, onions, cheese and bbq sauce. I am definitely a fan.

I also tried a soup that I had never had.
The Lemon Chicken Orzo (260)
This reminded me of chicken noodle soup but on steroids.

All in all this was a pretty productive, delicious evening for us. I am so excited to have a laptop that I can use all the time. This is going to make blogging even better then it already is.

So Quiche!!!


Last night while the hubster was playing golf I decided to whip something up in the kitchen while of course watching a Law and Order marathon. I already have lunch for this week, (See my chili recipe from yesterday) so I figured I would try out a breakfast recipe.

This past weekend one of my best friends got married so before the wedding we all went to a bridal brunch. There was so many yummies but there was one thing that was absolutely delicious. It was a bacon & veggie quiche. Now there was no way this was healthy but I asked my friends mom all the ingredients and it hit me I should totally make a healthy version. So here I go.
 
What you will need: This will make 4 servings
5 eggs

1 small red pepper

Handful of fresh chopped spinach

Handful of sundried tomatoes

¾ cup fat free cottage cheese

½ cup fat free sour cream

6 pieces of turkey bacon
Start by cooking your turkey bacon and preheat your oven to 350’. While that is cooking chop your veggies.
 
 
Once your turkey bacon is cooked chop it as well.
 
 
Once everything is prepared, mix all ingredients in medium sized mixing bowl.
 
 
Once mixed, pour in baking dish.
 
 
I kind of got distracted while watching Law and Order so I am not really sure how long I cooked it for. Just check it periodically and you will know it’s ready when the middle is no longer runny. 
 
 
 
After it is cooked, ENJOY!! This is great for my breakfasts at work.
 

 

Next I wanted to share a challenge I just started. My office is pretty large so they sometimes have different challenges for healthy living. On Monday they started the walking challenge. I am on a team with 4 other girls I work closely with and our team name is Sole Sisters. Clever right?
Our goal is to walk 10,000 steps a day which equals out to 5 miles a day. This will go on for the full month so let’s see if our team can win!! Go team SOLE SISTERS!!

Eating Healthy at Work & Skinny Crockpot Chili

Today I have a couple of things to share including a new recipe. YAY!! But first I want to start with today’s snack. My work caters in food all the time but most of the time it is in no way healthy. From the PF Changs, Southern Cooking, BBQ, Chips & Dips, Cupcakes, Ice cream, I could go on and on. Every once in a while I will get lucky and they will have a healthy snack like fruit & hummus & veggies. This morning they had Panera catered and I was pretty excited because this is what I came up with.

 
They had fresh fruit and also Mediterranean Egg White Sandwiches. So I simply just took off the bread/cheese and had eggs white, spinach and tomatoes. So tasty.
 
Next I wanted to share my new “Skinny Crockpot Chili” recipe.
 
 
What you will need:
 1 Rotisserie Chicken (only use the white meat)
Turkey sausage (diced)
1 Large can of organic tomato sauce
1 large can of chili beans ( I will probably use 1 small can next time for less calories)
Crushed red pepper ( you decide how spicy you want it) Fresh Parm Cheese (20 calories per 2 tbsp)
 
All you have to do is throw it all in a you crockpot, add a little bit of water and let cook on low for a few hours. Then it is ready to serve! See so easy & healthy!!

Eats & Auntie Time

Like I mentioned last week I am not into the whole gluten free fad. I understand if you can't have it and I am thankful that I can have it. But latley I have been trying a few products that are gluten free and I have to say they are pretty tasty.

For example yesterday's breakfast. I had a gluten free waffle with sugar free sryup. Honestly I couldn't tell any difference from a regular waffle and the best part is that it is all under 145 calories.


For lunch I had my usual... a wrap.
Either I was really hungry or this was the best wrap I have made thus far.
What was on it one might ask?
Deli turkey and chicken with reduced fat colby jack cheese, romaine lettuce, red peppers and garlic hummus on a wheat wrap.  All under 270 calories.

  
Next for snack I had a nonfat yogurt with a tablespoon of walnuts . So delish.


Last but not least I wanted to share my auntie time last week. As soon as I walked in 
the door I heard his momma screaming because someone started crawling!!!


I can't believe how fast he is growing. Can't wait to see this little man running around soon. I might have a new jogging buddy before I know it.
