Crab legs, boys and 30 things to stop doing to yourself.

Yesterday the fiance was around my work during lunch so we decided to meet up for a little lunch date. As soon as he asked what was around my work I knew where he would want to go.

He is pretty much obsessed with any type of seafood.
 
 
Both of us haven't been to Joe's in forever so we were surprised with the amount of choices they had. We ended up going with thisssss.....

 
It was a pot for 2.
 
Ways I kept it healthy at Joe's.
1. used cocktail sauce not the butter sauce
2. Drank plenty of water
3. Gave the potatoes to the fiance
4. Only had one bite of the sausage ( just to try) and gave the rest to the finace
5. Said no to dessert :)

There is no way I can eat lunches like that everyday. After I got back to my desk I was stuffed and sleepy. But I guess every once in a while it is good to have a little lunch date :)
 
After work I headed over to hangout for a birthday party. I was pretty excited because I got to see this face.
 

 
and there were even two more cuties I got to play with. They are at my favorite age.

 
And well he is just plain perfect.

 
Eating healthy at a birthday party is normally impossible. At this one they had pizza. If you know me you know it is so hard for me to turn down pizza but I did it. I knew I had food at home that I could eat later. My bathing suit was very happy for my decision.

Spring....it medicates the bones and revives the spirit.

 
 
Friday after work I met the fiance at Wild Wings  for a little bit of food and basketball. I am not really a fan of basketball but I figured I would just go an hang out.

 
Saturday morning I woke up and  went to check my mail and found this sweet little invitation. This can not come soon enough. I haven't been on a vacation in so long and being with all my girlfriend's will make it perfect. Let the countdown begin.

 
 On Sunday I did what I always do, I woke up and thought of something to cook for the week. I was in the mood for something spicy so my mind started turning. It was rainy and yucky but I knew I needed to get out so since I was already out I did a little shopping. I have my first bridal shower this weekend so I wanted to find a new little dress. I of course had no such luck. Isn't that how it always works?  You can never find something when you are looking.
 
 
So my frustrated self just headed to the grocery store and picked up everything I would need for my Sunday Cookday.
 
Cheesy Jalapeno Popper Chicken
What you will need
chicken tenders
1 head of cauliflower
verde salsa
jalapenos
non fat greek
fat free cream cheese
skim mozzarella
2 eggs
unsweetened almond milk

 
Start by cooking your cauliflower in the microwave. It took about 15 mins and I added a little bit of almond milk to make it softer.

 
Once cooked add your jalapenos, greek yogurt and 1/4 cup skim mozzarella

 
Then pour into blender and puree.

 
Once mixture is smooth pour in bottom of baking dish and

 
then add your strips of chicken.


For your cheese topping mix your fat free cream cheese, 1/2 jar verde sauce and 1/2 cup skim mozz cheese. I then melted it.

 
Once it was melted I topped the chicken.

 
Then let bake for about 30 minutes. When I checked it I noticed that it wasn't really sticking together so I then stirred in 2 eggs and that did the trick.


I then let cook for about 30 more minutes and then let cool. This was quite tasty and very low carb. It will be great for my work lunches.

 
Last I just had to share this picture. Miss Motor is just the cutest. She loves to just lounge around and hope I drop food on the floor. She had surgery a few weeks ago so that is why half of her belly is shaved :)
