My Parents Begin Their Journey

Both of my parents have retired and now they are just enjoying their lives without screaming kids running around the house, (their is four of us), running all over town to get us to all of our practices, daddy taking all of his business trips, momma making sure we finish all our homework and cooking dinner. Throughout my childhood I can only remember happy times and smiling faces from both of my parents. They never showed any struggle or any fights in front of us. (come on all parents fight sometimes) I am lucky enough to have parents that no matter what love each other unconditionally. My dad I can say is one the hardest workers I have ever met. I can only strive to be as successful as he is. My mother on the other hand is a super woman at being a mom. I can only hope to be as good of a mom as she is. Now that my dad has retired they are able to do things that they were never able to do with all of us kids spending all their money. They have bought a house in Florida so they can finally sit back and relax and believe me they deserve it. Both of my parents are very active people, they always have been. So they are always looking for new adventures and boy have they found one!

Today my parents began their journey across the US in a camper. (we're from the mountains people, you know we love to camp)
When I got to thinking about what I wanted to post about today they automatically popped in my head. I thought 1st who in the world could spend an entire month in a camper with someone else. I would go crazy I think but not my parents. Out of everyone I know they still have that look in each others eyes that I bet they had when they first met. Sometimes it kind of grosses me out how much they love each other. But then I am thankful because I have been raised to know what a true loving marriage is like. I know that know matter what my parents will always stick by each others side. Honestly I look up to my parents more than anything in the world. They are my rock. Anytime I have a struggle or something exciting happens I go to them. Isn't it funny how we change through the years?
 
 
I just spoke to them to wish them safe travels and they said they would send me a picture of where they are every night. So I am going to be sharing their journey with ya'll! Hey you might realize they are in your town. Anyways I wish them the best time ever and I pray that they are safe. I love you guys!

Breakfast: skip
Lunch: spaghetti squash with low sugar marinara and skim mozzarella cheese
Snack: grapes
Dinner: spagetti squash with low sugar marinara and skim mozz chesse and a small amount a bbq

Work Those Abs & Zucchini Pizza

Last night when I got home I was super excited to pop something in the oven take a hot bath (so sore from my workouts lately) and relax on the couch. Of course there were brand new movies on Demand Lifetime so I had to check one out. I decided to make zucchini pizzas because I haven't made them in a while and if you know me you know I loveeee pizza. So I got everything out that I would need to make my pizza masterpiece.
You will need for pepperoni pizzas
zucchini, pizza sauce (low sugar),turkey pepperonis and skim mozzarella cheese
You will need for spinach pizza
zucchini, fat free cottage cheese, spinach, garlic salt and skim mozzarella cheese


Let bake for about 15 minutes and get ready


because they are yummy!


The spinach pizzas were actually my favorite. I will be having more tonight for dinner, for sure.


Like I mentioned earlier, I am pretty sore from my workouts lately and my knee this morning
  wasn't feeling that great. I knew the ab workout that I wanted to do today I could do at home so I decided that I could run after work outside and be able to do the rest of my workout at home (not a fan of the gym at night)
So tonight when I get home I'll make sure I get my workout on :)


(for some reason the bottom got cut off. But I will be doing 1 min. side plank on each side)

Tomorrow is Friday THANK goodness. I feel like this has been such a long week.


Day 215:
Breakfast: 2 eggs with skim mozz cheese and spinach
Snack: 20 almonds and tiny amount of trail mix
Lunch: leftover casserole
Snack: turkey pepperonis and protein bar
Dinner: zucchini pizzas

Yesterday's Workout, Today's Workout and a New Recipe

Yesterday I realized pretty fast that I am a morning workout person (never thought I'd say that). When I got home I got my workout clothes on and headed out the door. I love my new pair of workout pants I got from Marshall's because they have a yip up pocket so I could put my key and gym membership card in it so I didn't have to carry them. It was such a nice evening I could smell fall. I ran to the gym and when I got there I went through my arm workout that I posted yesterday. After I ran back home :) With my entire workout I burned 374 calories.
 
 
This morning I got back to my normal routine and headed to the gym. This was such a good workout!
 
 
All together I burnt 439 calories. Whew I was sweaty!

 
Nowww to the new recipe......
 
What you will need
1 bag of frozen broccoli
turkey sausage
fat free cottage cheese
2 can of squash
3 eggs
flax seed
garlic salt
crushed red pepper
reduced fat cheddar cheese

Preheat oven 375'
 
Start by mixing everything together.
Make sure you drain your broccoli
Use half of the container of cottage cheese
4 tbsp of flaxseed
All turkey sausage
All broccoli
1/2 tbsp of garlic salt
You decided on crushed red pepper
3 eggs
Save reduced fat cheese for topping

 
Pour mixture in baking dish. Make sure you spray the bottom of the pan.

 
Let bake for about an hour.
Take out and check the middle to see how cooked it is (you might want to do this after 30 mins, mine took longer because I forgot to drain the broccoli so it had a lot of water to bake out)
I then sprinkled reduced fat cheese over the top and let bake for another 15 minutes.
Let cool.


Then I enjoyed a yummy dinner. And I have been enjoying for lunch everyday since Sunday ha:)

Breakfast: 2 eggs with sugar free syrup
Snack: 25 almonds
Lunch: leftover casserole (above) and what was left of my sweet potato from last night.
Snack: side salad with low fay yogurt dressing an trail mix
Dinner: zucchini pizza

New Workout, My Sweet Momma and a Yummy Dinner

I am going to be doing my workout after work today because I want to run outside. I am loving the weather lately. So here is the workout I will be doing. I'm going to be focusing on my arms today.
 
 (to and from the gym is about 3 1/2 miles)


Last night when I got home I went over to check my mail and had a sweet little surprise in it. I rarely check my mail because honestly most the time it is just bills and who like bills ha. But last night was different my mom had mentioned she sent me something so it made me smile when I saw this . She sent me a sweet letter with an article she found in a magazine that she thought I would like reading. She is the best!

 
Now to my dinner...
 
Last night thaere was a chill in the air that reminded me of fall. Anytime I think of fall I think of cuddling up on my couch with a nice warm blanket and watching a good ole Lifetime movie. So I did just that. I popped a sweet potato in the oven and lite all my pumpkin candles (hey I tend to go all out) and got ready to watch two movies that I haven't seen before. Halfway through my first movie my sweet potato was ready and boy was it tasty. When it was about halfway cooked I cut it open and added a very small amount of extra virgin olive oil, crushed red pepper and garlic salt. When it was finished I dipped it in a small amount of extra low sugar ketchup. It was the best dinner.

 
During my second movie I tried out a new frozen yogurt that I found and oh my goodness, it was pure heaven.
The great thing is it only has 130 calories for each serving. They have a bunch of different flavors that I do believe I will have to try.

Lunch: broccoli, squash, flax seed, turkey sausage casserole
Snack: side spinach salad with low fat yogurt dressing
Dinner: Sweet potato with 1 tbsp of ketchup and a icy pop

New Goals and A Race Toward's Our Future


and run 3 more 5ks by Jan. 1

Now to the weekend.......

This past weekend I went to visit my best friend from college in Charlotte because we had planned to run a 5k together. It would be my 2nd and her 1st. Saturday morning I woke up bright and early and got ready to head to Charlotte. Of course I already had everything laid out.

 
I made myself a quick breakfast. 2 eggs and grapes and met up with the bf. (aka my cheerleader)

 
We headed out but first since it was so early we needed some caffeine.

 
I normally would never buy coffee from Starbucks because I think it is over priced but they have the best pumpkin latte ever and I wanted to treat myself. (actually the bf treated me ha)

 
When we got there we met up with Debi and got our packets for the race.

 
Then got pumped up. ( I think we will always act like kids around each other)


 
Such a handsome cheerleader I had. He really did want to run but changed his mind because he said he knew I would want some pictures. What a man I have:)


 
Then it was race time. I was getting a little nervous when they started explaining the course. I was not used to running trails.
 

 
Butttt I finished and I beat my first time by 3 minutes,

 
I burnt 372 calories

 
and I felt good!!

 
I ended up getting first place in our age division. (I won't say how many were in our division ha)

 
After the race we headed back to Deb's house to hang out the rest of the day.
I got to ride in the back with this cutie.

 
I think being able to play with her was the best part of the day. I just love her!!

 
It was then time to head home. Wheew what a trip.
 
My next 5k will either be October 12 or 19 in Greenville.
 
 
Day 210:
Breakfast: 2 eggs with grapes
Snack: protein bar and energy gummies
Lunch and dinner: veggie burger with salad
 
 
Day 211: LAST CHEAT DAY TILL I REACH MY MONTHLY GOAL
 
 
Day 212:
Breakfast: skip
Lunch: Broccoli, squash and turkey sausage casserole.
Snack: side salad with low fat yogurt dressing
Dinner: sweet potato, a few bites of  broccoli, squash and turkey sausage casserole.
Dessert: frozen yogurt
