LittleBlueDress IS ONE YEARS OLD!!

I can't believe it has been over a year since I started LittleBlueDress. I went back this morning and read my very first post and was so proud thinking back of all the things I have accomplished this year.

After 234 posts, over 37,000 page views, 30 pounds, learning new healthy recipes, learning the importance of a good workout, running 5ks, getting engaged, moving into my first home, getting an awesome job and really just learning to enjoy life I can honestly say this has been the best year of my life. Healthy THAI... YES PLEASE!

 
As you know my favorite day of the week is Friday because that is date night at Thai Taste. I absolutely love Thai. When I say I could eat it everyday I really could. So Sunday I decided to create my own healthy Thai version of what I normally have at Thai Taste. I have to say it turned out quite yummy.
 
What you will need
ground chicken
broccoli
sun dried tomato quinoa
siracha hot sauce
soy sauce
cabbage
ground ginger
reduced fat peanut butter
red pepper
 
 

Start by chopping up your veggies and
 

 
defrosting your broccoli.

 
Then cook your ground chicken and quinoa.


 
The sauce is super easy to make. Just 1/4 cup reduced fat pb, 1 tbsp of siracha and soysauce and top it off with ground ginger.

 
Mix together,

 
And add to your mixture. (meat and veggies)


 
Once quinoa is finished add to mixture (you might want to add a little bit of water). Let cook on medium for about 20 minutes. ( I am not really sure how long I cooked it because I was outside doing yard work)

 
I worked up quite an appetite while doing my yard work. So I was very pleased with the outcome of my creation.
 
Homemade healthy Thai.... I think I have found my new go to dish!
