The Best Mail & Cheesy Rotel Chicken Casserole

I wanted to start off with some of the best mail I have gotten in a while. My nephew's first birthday invite. I can't believe how fast this year has gone and that he is already turning one. I remember this time last year I was counting down the days for his arrival. I just love him!!

Now to the yummiesssss....
 
Last night I was in the mood for something that would take a while to bake. I wasn't that hungry so I decided to make some sort of chicken casserole. Now I usually buy a rotisserie chicken because it is quicker but I decided to go with raw chicken this time. So I came up with this tasty recipe.


What you will need
Chicken tenders (I got the breast because they were on sale and just cut them into small pieces)
Rotel tomatoes
Sun dried tomato quinoa
Non fat plain greek yogurt
Minced onion
Italian seasoning
4 oz fat free cream cheese
reduced fat sharp cheddar cheese
paprika
 

 
Start by preheating your oven to 350'
 
I then cut up my chicken while the quinoa was cooking.

 
Line up all raw chicken on the bottom of baking dish.

 
Then mix all ingredients together for sauce. (cream cheese, seasonings, greek yogurt and rotel tomatoes)

 
Once the quinoa is cooked pour on top of the chicken.

 
Then pour your mixture on top of your quinoa.

 
Let bake for about 40 minutes.
Then take out and sprinkle shredded cheese on top.
Then bake for another 10 minutes.
After that make sure you check your chicken and it is fully cooked.
I don't want anyone to be getting sick :)

 
I enjoyed mine with a side of sweet potato fries.
(Don't laugh at my plate, I am moving soon and have already packed up all my dishes)

Day 16 recommit:
Breakfast: 2 medium eggs with spinach and sugar free syrup
Snack: 25 almonds
Lunch: spaghetti squash with ground chicken and low sugar marinara and cheesy rotel chicken casserole (very small portions of both)
Snack: sweet potato fries
Pre workout snack: 100% whole wheat toast with skim cheese
Dinner: cheesy rotel chicken casserole and a few bites of spaghetti squash with ground chicken and low sugar marinara


192 days no diet mountain dew

29 days till (new) ultimate goal-

April 4th 1st 10k- 170 days
