Spring is finally here and summer is just around the corner. What does that mean? Outdoor Activites!!
 
There are a lot of things that you can do to keep in shape and still have fun outdoors.

So here is just a few of my favorite ideas!

1. Pool Fun
For those of us that don't like swimming laps, try mixing it up with a pool volleyball game. (believe me it's a workout, especially if you get the guys to join in)

2. Hiking

Now if you know me you know  I am not much of a hiker. I am getting better at trying to enjoy it but it is still hard. But there are trails in every town that are not hard and sometimes it's good to just get out on them to clear your mind.

3. Join a softball or kickball league
I have been wanting to do this for years. I have seen friends do it in the past and it just looks like so much fun. Not only do you get good exercise but you get a good tan too. ( just make you don't get to much of a farmer's tan)

4. Bike Riding
This year I have asked for a bike for my birthday. I have never been much of a biker rider but I want one of those vintage bikes that I can do some leisure bike riding. Nothing like my dad who does 100 mile bike rides all the time. That is what I call just plain nuts :)!

5. Skiing/ Knee boarding
I think I like going to the lake more than the beach because it isn't as crowded, you have your own little area, no salt water, and no sand. I grew up going to the lake and you would think I would be a great skier by now but nope I am horrible but at least I can knee board and tube. Those aren't as hard to get up on, obviously. Now when you do all of these all day you wake up the next morning feeling sore, so you have to know what a good workout that is.

So here you go, I would pick at least one of these things to do weekly so you won't be stuck inside  that stinky, sweaty gym while it is beautiful outside. This way you get to enjoy two things at once, getting fit and the beautiful weather.


Day 81:
Breakfast: 2 hard boiled eggs and skim string cheese'
Snack: pistachios
Lunch: chicken spaghetti squash
Snack: non fat yogurt
Dinner: spahetti squash again ( I tell you, I could eat it for every meal)

Frozen Yogurt Bites

 
Now that the weather is warming up, it is nice to have a cold little treat to enjoy. If you know me, you know I have a bit of a sweet tooth. My mom said when I was younger I didn't care about presents for Christmas, I just cared about the candy. Now that I am older I can't just sit back and eat a huge bowl of ice cream with candy on top. So I got to thinking, what could I make that will satisfy my sweet tooth. Then it hit me.
 
Frozen Yogurt Bites
 
What you need
nonfat yogurt
zip lock bag
 
 
Start by pouring the yogurt into your zip lock bag and then cut the tip off of one side of the bag.

 
Then pour yogurt into small circles on a plate,

 
make sure they don't touch.

 
Put them in the freezer for about 30 minutes or until they are hard.
Then take out and put on a plate and let sit at room temperature for about 5 minutes,

 
Then enjoy your quick, easy, tasty summer treat without worrying about your waistline.
 
 
Day 80: 
Breakfast: 2 hard boiled eggs and skim mozzarella stick
Snack: 1 oz. of almonds
Lunch: ground chicken spaghetti squash (low sugar marinara sauce)
Snack: non fat yogurt and a small handful of pistacios
Dinner: date night with the bf. We are going to our favorite place Thai Taste. Where I have the Chicken and veggies very spicy and with no rice.
Dinner: no sugar added fudgesicle
 
Day 18 no diet mountain dew

Mexican Chicken Salad

I pretty much love Mexican food anytime, all the time. So when I stumbled across this recipe I just knew I would have to give it a shot. It is easy, cheap, and of course yummy!

 
What you will need
Crock Pot
3 Chicken Breast
1 can of black beans
1 can of rotel tomatoes
1 can of whole kernel corn
1 can 99% fat free chicken broth
3/4 packet of taco seasoning
4 tablespoons of light sour cream
greens onions to top
 
 
 
Start by putting your chicken and chicken broth in the crock pot on high for about 30 minutes. Check occasionally some cook faster some slower but my chicken took about 30 to 40 minutes.

 
While it is cooking mix your black beans, corn and  rotel tomatoes.


 
Once the chicken is complete cut into small pieces and add to bowl, along with 4 tablespoons of light sour cream and the 3/4 packet taco seasoning. Mix together. Once fully mixed, add chives.

 
Now you can eat this two ways. You can keep it cold like chicken salad or you can warm it up. I tried it both ways and I found that warming it up tasted much better.
 (unless I was at a cookout on a
 beautiful day)
 
After it is all completed, you can go ahead and pack your lunch for work for the next day and the great thing is it makes about 4 servings. (make sure you don't let it get old though)

 
 
Day 76:
Breakfast: non fat yogurt and 1 hard boiled egg
Snack: skim mozzarella stick & 1 oz of plain almonds
Lunch: 1 cup of mexican chicken salad
Snack: pistachios and a small orange
Dinner: ground chicken spaghetti squash
Dessert: frozen yogurt bites

The Roe Wedding

 
aka: the reason for the LittleBlueDressChallenge
 
On Friday evening we all met at Duncan Estates for the rehearsal so we could make sure no one broke their necks because we had to walk down stairs for the aisle. So we ran through it a couple of times and then we were off to the now husbands parents house for the rehearsal dinner where we had low country boil.
 
 
 
The decorations were just magical,

 
now all the boys were a different story. haha

 
After as many laughs as our stomachs could handle it was time to head home and get some sleep for the big day.
 
 
All the bridesmaids came over to the now brides house that morning to get our hair done and try to keep the bride calm.

 
So we let her take some control and run to the venue to make sure everything was perfect.

 
 
 
But then it was her time, she needed to get ready.

 
I caught this sweet picture, this is both mother's helping each other get ready.

 
After words of wisdom from the brides mother and some happy tears,

 
we all headed out to begin the pictures. (I of course had to call the groom to tell them to wait because we were running late)

While we were waiting we made up a best friend forever secret hand shake...the little girl and I :)

 
After a ton of pictures it was wedding time. Now I didn't get any during the wedding because well I was in it. ( I'll make sure to find some)
 
After the most beautiful wedding ever it was time for the reception and boy was this a blast.
 
 
After introducing the fabulous couple, we had dinner, speeches, the cake cutting and then it was time to get our dancin on and we did, I am still sore.

then the Mother of the Bride's speech and let me just tell you there wasn't a dry eye in the house. (well under the tent)

 
After we wiped all our tears it was time to dance.
 
They were my dancing buddies all night.


 

 
After they tossed the bouquet and the garter, we just had a blast.







 
But it got late and we all were exhausted.
 
This is where everyone found use by the end of the night. Playing in the rocks resting out feet.
 


 
It was a beautiful wedding and such a great time.
 
I was so proud of how far I came with my challenge and can't wait to continue till I reach my ultimate goal.
 
 
Day 75:
Breakfast: nonfat yogurt
Snack: skim mozzarella cheese stick
Lunch: mexican chicken salad (check out tomorrow for step by step recipe) ,strawberries and edamame.
Snack: pistachios and 4 pickles (the cut ones)
Dinner: 1 boiled egg, green beans, 1/2 cup mexican chicken salad and a few bites of chili ( I know weird combination for dinner but I didn't feel like getting out and getting something)
  
 
16 days no diet mountain dew

Another Countdown


 So this past weekend it was finally time to slip into that Little Blue Dress and I was very surprised with the results. IT WAS TOO BIG!! Now it wasn't so big that I couldn't wear it but it was definitely loose. Which is great because when I first got it I could barley zip it up. So after all my hard work it was all worth it but it isn't over yet,  I have another wedding that I am going to be in 46 days and as you can guess this is going to be a Little Green Dress. I will be doing the same thing that I have been doing for the past 73 days and I hope you all will continue to read about my journey.

Make sure you check out tomorrow. I will be adding all (well some, I took like 300 pics) from the wedding!!!

Day74:
Breakfast: 2 eggs with hot sauce
Lunch: grilled chicken salad
Snack; edamame and plain turkey hot dog ( no bun, just the dog)
Dinner: a small cup of chili and a few bites of my mexican chicken salad.
