America's Favorite Past Time

Last night I decided to go out to the ball field with some of my favorites. I haven't been to a baseball game in years but last night was the perfect night to go. It was the last Thursday game of the season so it was packed with people sipping on ice cold drinks and eating their body weight in popcorn and hot dogs. Its was a blast!
 
 
Nothing like the smell of hot dogs,  a beautiful sky and fun friends.
 
 
I think I watched maybe 2.3 seconds of the game.
 
 
One of my good friends Taylor.
Super excited about this weekend we are going to some event (I forgot the name) all day Saturday. I will make sure to take tons of pics and share them on Monday.

Breakfast: egg omelet with feta and spinach

Skinny Southwestern Meatloaf

Now to the food...
 
On Monday I was craving meatloaf but not just the traditional kind, I wanted to spice things up a little. This is what I came up with.
 
What you will need
ground turkey
1 can of whole kernel no salt added corn
low sodium black beans (drained)
veggie quinoa
1 1/2 limes
taco seasoning
reduced fat cheddar cheese
1 egg (not pictured)
 
 
Preheat oven 375'
 
Start by cooking your ground turkey and quinoa.
Then mix all ingredients in large mixing bowl.

 
Pour mixture into cooking dish and shape like you would normally shape a meatloaf.
Then squeeze a 1/2 lime over entire meatloaf and then top meatloaf with the other lime.

 
Put in oven and let cook for about 25 minutes.
Then top with low fat cheddar cheese and jalapenos.
Let cook until cheese is fully melted and ends are golden.

 
To make sure it is fully cooked put knife in the middle.
 
Then enjoy your yummy Skinny Southwestern Meatloaf.

 
I then treated myself to a dessert.
It consisted of fat free whipped cream and 1 spoonful of my pumpkin pecan butter.

 
Words can't express how delicious this was.

 
Week 12 Workout 2
 
I am getting closer and closer to the day of my first 5k and getting super excited. I am now up to running 2.50 miles. Now that might not seem like much but  when I first started working out I couldn't even run for 3 minutes not even exaggerating. But after pushing myself harder than I have ever pushed myself it is getting easier ever day. (proud moment for myself)

 
This workout was defiantly a sweaty one and I have decided I reallllly hate doing forward lunges. Most people that I talk to hate burpees or something a little tougher than lunges but me not being the most graceful person in the world I just look like a spastic chicken doing them. No lie I saw someone giggling at me this morning. This is when it is good that I can laugh at myself. ha
 
During my workout I burned 514 calories in 1:18 mins.
 

 
 
Day 190:
Breakfast: 2 eggs with reduced fat cheese and sugar free syrup
Snack: large fresh produce stand red apple
Lunch: 2 small portions of skinny southwestern meatloaf and spaghetti squash with ground turkey and organic low sugar marinara sauce.
Snack: protein bar and edamame
Dinner: edamame, sushi and miso soup

Family Weekend

 

I wanted to share this past weekend with everyone because it was just plain fabulous. I went home to support my dad and brother because they were in a  100 mile bike race across the Blue Ridge Parkway.  Friday night we went to my brother and his wife's house for dinner so they could prepare themselves for Saturday. They had huge plates of spaghetti but I just stuck with a large salad. Afterwards I gave them their good luck cake and cards.

Afterwards we headed to my parents house so that my dad could get everything ready for the big day.


 
5:30 am came early but they couldn't get started without their cheerleaders.

Nothing beats home in the morning. The views are breathtaking.

 
The newly weds still can't keep their hands off each other.

 
It was finally time to give them both their good luck hugs so they could head to the starting line.
 
 
It was crazy how many bikers there were. Then and there my brother's wife and I decided we are doing the 25 mile race next year.

After they headed out for their very long journey, mom and I decided to get a little exercise ourselves.

 
Growing up the best place to run was around the lake. It has a trail around the entire thing with a beautiful view to distract you.

(Week 11 Workout 4)
 
Afterwards we sat and relaxed and had some mother daughter time.
A woman came up to us and asked if we were related because we looked so much alike. I of course said she was my mom. She said that we had to get a picture of this because it was just too perfect.

 
After seeing both pictures, I couldn't agree more.

 
Later that afternoon we decided to go up to the Blue Ridge to check on how the guys were doing. We finally found them going up this huge hill/mountain.(I don't know how they do it)



 
They took a quick break and of course I had to snap a few pictures. (This is at mile 83)

 
This is also what I did while cheering them on. I love wild flowers.

 
And of course you can't have a race without a sign. I brought out my old school cheerleader poster making abilities. (and I mean old school ha)
 
 
After we sent them on their way for the rest of the 100 miles. Mom and I needed something to wake us up. It had been a very long day (It is tiring watching people ride 100 miles up a mountain ha) We also went to a bunch of local produce stands and I got some tasty treats.

After many hours we finally saw them cross the finish line (okay I'm not telling the truth we missed them going across the finish line because we got distracted at the produce stands but we only missed them by a minute)


THEY MADE IT!! 

 
My dad was too tired to drive home so I brought out the mountain girl in me and took control of the situation. This thing sure is bigger then my little car:)

 
I just love home. It truly reminds me how blessed I truly am!

Snack: a very large fresh peach that I bought from the produce stands this past weekend
Lunch: Southwestern meatloaf (recipe tomorrow)
Snack: protein bar and edamame
Dinner: spaghetti squash with ground turkey and organic low sugar marinara sauce
