Stuffed Turkey & Quinoa Peppers

Last night I decided to make stuffed peppers. I always forget about them and they are so easy and non expensive to make. So I stopped by the grocery store on the way home from work to pick up all the yummy things I would need to stuff my peppers. This go round I decided to make them nice and simple.
 
What you will need
quinoa
red peppers
ground turkey
low sugar marinara
reduced fat mozz cheese
garlic salt
Italian seasoning

 
Start by cooking your ground turkey then drain.
Then add your sauce, cooked quinoa and seasonings. Let cook for about 15 mins.


While your sauce is cooking, cut the tops out of your red peppers and scoop out the seeds.
 

 
Once your sauce is mixed well, fill your red pepper.

 
Let cook on 350' for about 10 to 15 mins.

 
Then add your reduced fat mozz cheese to the top.
Let cook for another 10 to 15 mins.

 
Once your pepper is soft and your cheese is melted, let cool.
Then enjoy!
This was such a filling dinner. I will definitely be making these more often.

December Birchbox

So you must have known it was getting close to BIRCHBOX TIME!
The great thing with my new house is I don't have to wait till the office is open to get my package.

Taylor's "22nd" Birthday & Back To My Strict Healthy Living Lifestyle!

Friday night is normally our date night and this week was no different. For dinner we headed to Thai Taste (our favorite place to eat ever) and then just hung out afterwards. Saturday morning whenever I woke up it was rainy, cold and just a yucky day. I did a little bit of shopping and then watched a movie in my nice, warm, dry house before getting ready for a night on the town with some of my favorite people ever.
 
We had all planned to meet at Firebirds for dinner at 7. I had only been to Firebirds once in Chapel Hill for my brothers graduation but I remembered that it was wonderful. And I remembered right. I got the grilled shrimp and strawberry salad and it was fantastic. I normally eat salads when I go out to dinner and I have to say this was my favorite salad yet.
 
 
We all enjoyed our food and

blow out her "22nd" birthday cake.

 
After dinner we all decided to head downtown to hangout for a bit.
 
What a great hubby he is carrying all her stuff to the car.

 
The night was fabulous but I didn't capture most of it. I guess I wasn't in the crazy picture mood I normally am in. But no need to worry I for see many more fabulous nights with these people.

 
 
Today I start back to my strict healthy living lifestyle until the wedding. No more cheat days till the night before the wedding!!!

Do 30 minutes of aerobic activity (walking, jogging, running, elliptical) at least 3 times this week.

Write down your weight (always weigh yourself in the morning for consistency), and use a measuring tape to record the size of your chest, waist, hips, thighs, and forearms, so you can monitor your progress. To stay motivated, keep notes all the way through.
Tip: Weigh in and take measurements once a month only. Focusing on quick results will only discourage you.
