Two Chefs & A Talented Friend

 
 
Today I had lunch at my favorite place in Greenville, Two Chefs. All the food there is so fresh, delicious and some of it is healthy.
 
When you walk in it is normally crazy busy but I had to go early today because I had a busy work day ahead of me.
 
 
When you walk up to order they have all of their fresh pasta salads, pimento cheeses, chicken salads, kale salads, etc. My mouth literally just waters when I look at everything.

They also have another refrigerator that has prepared food that you can get to go for dinner that night. (pretty awesome if you ask me) I should do this every day and make Shaun think I am actually cooking it.
 


 
 For lunch I had the grilled chicken salad. When I tell you this is my favorite salad in the world I mean it. It is pretty simple just lettuce, cheese, almonds, chicken and their homemade light dressing.
 

I don't know what they do to make it so good but it is defiantly worth every penny!! 
 

 
Now to my talented friend, Taylor. Her and her husband have been good friends with Shaun and I for a while now and they were both in our wedding. But right after the wedding they literally moved to a different state because her husband got a new job. So now we have a new place to visit, often!! Anyways she was in town this week packing up their house and met me for lunch and had this special present for me. She actually painted this. Make sure you notice to the left there is a picture of Shaun and I on our wedding day.

 
I just love things like this, they mean more to me then any store bought present. I truly have been blessed with some amazing friends.
 
Oh I told her she should sell these....don't you agree?

My Next Splurge & Quick Eats

If you know my my dad and brother you know they love their bicycle riding. It can be in the mountains, beaches, swamps, basically anywhere a bike can go they will do it. Well I am a different story, I like flat land with maybe just a few little hills. You can still get a great workout even if you don't bike up a huge mountain. So I have decided that now that I have started back to my healthy lifestyle (gave myself a few weeks after the wedding to splurge) I am going to set a goal weight (where I was a few months ago) and once I get there I am going to buy this cute little thang. This will be perfect for my leisure bike rides that I love so much.
 
 
Now to my meals for today. I am still feeling under the weather so yesterday I really didn't feel like packing a lunch so I figured I would just pick something up in the cafeteria at work. Eating healthy in a cafeteria isn't always easy. The breakfast bar is always so very tempting with the casseroles, sausage and biscuits but I decided to go with a 2 egg omelet with spinach and a small amount of cheddar cheese on top with hot sauce on the side.

 
Now for lunch it is really not that easy to eat low carb/cal in the cafeteria. So yesterday when I was at target with the hubs I decided I would try this black bean soup out.

 
So I got a piece of grilled chicken from the cafe and
 

 
then mixed it in with the soup.
HOLY SOUP. This was amazing and it only has 240 calories. (without chicken) They have so many different types so I can't wait to try out more. I will make sure to let you know my favorites.

Healthy Taco Soup

If you have followed my blog you know that I am a huge fan of soups, especially in the fall. But I have been under the weather this week so all I have been able to think about is soup and hot baths. So today I wanted to share one of my favorite recipes.
 
What you will need
ground turkey
black beans (drained)
whole kernel corn (drain)
rotel tomatoes and green chilies
non fat greek yogurt
low sodium taco seasoning (2 packages)
jalapenos
2 can of tomato sauce

 
Start by cooking your ground turkey. Once cooked fully drain your turkey then mix in one packet of taco seasoning.
 
After completely mixed, add the rest of your ingredients.

 
Mix together......

 
Then cover and let cook on medium to low for about an hour stirring occasionally.

 
Once it was finished I packaged it up for my lunches this week.
So easy, yummy and we can't forget low calorie.

HAPPY 4th OF JULY

 
 
I hope everyone had a great 4th of July Weekend. Mine was full of kids, yummy food and some much needed rest.
 
On Friday I headed over to my sister n laws to hang out with one of my favorite fellers. We played for a while

 
but then it was of course nap time.

 
So while he got his handsome rest I decided to do a little cooking for the party that night.
I made two yummy cheese cakes and some pasta salad (no pictured)

 
Finally after a long nap I had my playing partner back.


Later that afternoon people started showing up for the party and I had to document one of my girlfriends recipes. It was super healthy and SO easy.

 

 
All you need is shredded broccoli, splenda & red wine vinegar.


She literally just mixed it all together and it was ready to eat!!


 
After everyone got there we all headed out to the patio to hangout and catch up with each other. AND of course watch this cutie in the pool. He LOVES water!

While he warmed up the rest of the little ones took turns getting tractor rides.

 
Finally it got dark enough to watch the fireworks. They were awesome but I couldn't seem to get a good picture.

 
The rest of the weekend was full of naps throughout the day and hanging out with my hubby.
 
All in all it was a fabulous weekend.
 
Now as I mentioned last week I am getting back to my healthy lifestyle. I kind of gave myself a break after the wedding but now it is time to get back at it.  I will be cutting out bad carbs and sugars. I really want to focus getting back in the gym and cutting out diet sodas again as well. But like I always say, I have to take things slow to make sure I stick to them.. So get ready for some new recipes, workouts and some other exciting things coming soon.
