Perfect Pancakes

Growing up I was the kid in the family that always had to eat breakfast. So thank goodness my mom never minded to make me some. ( to this day she will even make me breakfast if I ask her to when I am home) But my breakfast eating habits have had to change since I was a little youngster running around all the time playing with my brothers and sister. So I have had to find substitutes for all my favorite breakfast foods. Because everyone knows breakfast is the most important meal of the day.
So here is my newest recipe!
 
What you will need
1 large banana
1 large egg
any toppings that you want to mix (almonds, peanut butter, berries, chocolate, etc)
sugar free syrup

 
Start by mushing up your banana (now they are slippery, so I eventually had to put them on a flat plate to mush completely)

 
Once fully mushed, add 1 egg,

 
and whatever you want to mix with it. I used just a little bit of peanut butter.

 
Then mix all ingredients till it is smooth.

 
Now the next step I thought would be pretty tough. (keeping the pancake together while cooking)
Butttt I remembered this awesome little omelet maker my mom got me for Christmas. I would suggest everyone have one, you can use it for so many different things.

 
So I added the ingredients to the cooker (medium heat.)

 
Then added a few almonds for a little extra flavor and then let it cook.

Day 87:
Breakfast: 1/2 perfect pancake and 2 veggie patties
Snack: skim mozzarella string cheese
Lunch: salad with chopped turkey pepperonis, almonds, skim mozzarella cheese, 1 hard boiled egg and low fat ceaser dressing. (made with yogurt)
Snack: handful of mix nuts
Dinner: veggie burger with grilled squash, zucchini, red peppers and provolone cheese on a bed of mixed greens

Day 88:
Breakfast: 2 eggs and a banana with 2 tablespoons of peanut butter
Lunch: spinach salad with grilled salmon, pepper, feta, hard boiled egg and low fat ceasar dressing  (made with yogurt)
Snack: handful of almonds
Dinner:

My new favorite lunch.

Quick, Healthy, Inexpensive Dinner

Do you ever have one of those nights when you don't feel like cooking but you don't want to eat fast food or take out? I had one of those nights last night. Now I usually love going home after a long day and trying out a new recipe but last night I wanted to go home kick of my shoes, take a hot bath and sink deep in my warm covers on the couch. So on the way home I stopped by and picked up a rotisserie chicken, frozen weight watchers broccoli with zesty cheese sauce and weight watchers corn. All I had to do was pop those babies in the microwave for 5 minutes and then it was time to eat. I didn't even use a real plate so I didn't have to clean up afterwards I could just throw everything away. So I sat down and enjoyed my 5 minute, less than 10 dollar, healthy dinner.
 


Day 86:
Breakfast: 2 eggs with 2 veggie patties
Snack: skim mozzarella cheese stick
Lunch: grilled chicken, turkey pepperoni, almond, skim mozzarella salad with low fat cesar (made with yogurt.)
Snack: non fat yogurt and pistachios
Dinner: The bf and I went to one of our favorite places for dinner where I had grilled chicken strips, broccoli and a side salad with just lettuce and feta, all dipped in hot sauce.
Late night snack: a few slices of low fat ham, turkey pepperonis and almonds

Just Some Outdoors Exercise

This weekend was wonderful. I didn't have to do anything, go anywhere, I could just relax. So that is just what I did all weekend. Now I didn't want to be lazy all weekend so the normal group and I went golfing on Saturday. Especially because it was so beautiful outside.









 
Now the rest of the weekend was basically me being lazy other than cleaning the apartment on Sunday. But I couldn't have asked for a better weekend, I needed it.
 
 
Day 82:
Breakfast: skip
Lunch: grilled chicken salad with balsamic vinaigrette
Dinner: texas fajitas (chicken, beef, shrimp, tomatoes, onions, peppers, lettuce, salsa, and a few bites of beans)
 
 
Day 83:
Breakfast: skip
Lunch: 2 turkey hot dogs with cheese and ketchup, no bun
Dinner: meatless salad, no dressing
 
Day 84:
Breakfast: 2 hard boiled eggs and non fat yogurt
Snack: skim mozzarella stick
Lunch: grilled chicken almond salad with low fat yogurt cesar dressing
Snack: mixed nuts & large green apple
Dinner: cauliflower pizza with turkey pepperonis and chicken
 
Day 85:
Breakfast: 2 egg omelet with little skim mozzarella and 2 veggie patties
Snack: skim cheese mozzarella stick
Lunch: grilled chicken, turkey pepperoni, almonds, skim mozzarella salad with low fat cesar dressing.
Snack: non fat yogurt and fresh fruit ( strawberries and pineapple)
Dinner: rotisserie chicken, weight watchers broccoli and corn.
