Overnight Oats

So I follow a handful of blogs everyday and one of my favorites is Peanut Butter Fingers.  http://www.pbfingers.com/. She always has so many different workouts and recipes that I want to test out but one I have been wanting to try for a while are her overnight oats. They are perfect because you make them the night before then they are ready to go when you leave for work in the morning.

What you will need
Greek yogurt ( I used strawberry flavor)
handful of oats
almond milk

 
All you have to do is mix your yogurt, oats and milk. It will be watery looking but once it sits overnight it will turn......

 
thick and creamy. This is such a filling breakfast and very low in calories.

Cheesy Shrimp and Sausage Pasta

 
It has been a little while since I created a new recipe so last night I decided it was time for a little therapy. So I headed to the grocery store, actually two grocery stores, to get everything I would need.
 
What you will need
Spag. squash
turkey sausage
1/2 pound of peeled shrimp (that isn't all the shrimp in the picture)
unsweetened almond milk
1/3 less fat cream cheese
shredded parm cheese
oregano
parsley
salt and pepper
crushed red pepper
red pepper (sliced)
 
 
Cook your spag sqaush on 375'
 
Then start by cooking your red pepper and turkey sausage.

 
Once cooked add cream cheese (entire package), almond milk (about a cup), seasoning ( I used a lot of crushed red pepper) and parm cheese (1/2 of the bag). (don't had your shrimp yet)


Let cook on medium so that it will thicken. If it gets to thick just add more almond milk. Once the sauce is the thickness you like add your shrimp and the rest of the parm cheese. Let cook until shrimp is pink and cheese is melted.
 
Then serve over your spag. squash.
 

 
So tasty and easy. This is a dish I think everyone will love.
 
Day 7:
Breakfast: overnight oats (recipe tomorrow)
Snack: special k chips and garlic hummus
Lunch: Chicken and veggies with 1/2 order of rice. (very small portion)
Snack: special k chips and garlic hummus
Dinner: cheesy shrimp and sausage pasta (snacked on some leftover shrimp too)
Dessert: frozen yogurt with almonds

New Do & You Can Still Eat Healthy

So I will start off with my new do!! Yesterday when I got off work I decided to head to the salon and try something new. I had never tried the ombre look so I thought why not?  For me I like to change things up every once in a while so I don't get in a funk. I probably won't keep it like this for the wedding but for now it is keeping me out of any funk that might have been coming my way :)
 
 
Next I wanted to share what I eat for my breakfasts and lunches when I don't cook. Sometimes I will be honest I just don't feel like cooking. Now on the other hand I really do believe that cooking is my therapy but sometimes I must not need therapy or I am lazy, take it how you want :)
 
At work we have a cafe and the really great thing is they serve breakfast too. Which is really good because if you know me you know I am NOT a morning person and if I had to pick to sleep and extra 10 mins or cook breakfast, I would definitely pick sleep. So when I get to work I go straight to the cafe and get a 2 egg white spinach omelet with hot sauce. So tasty!

 
Then at lunch I will get a grilled chicken wrap. I put the same thing on it every time
Wheat wrap
grilled chicken
lettuce
spinach
light cheese
jalapenos
spicy mustard
I then will either get veggies from the hot bar or some kind of fruit from the fruit bar.

 
I wanted to share this to show that you can still eat healthy breakfasts and lunches even if you don't pack one. Even if your work doesn't have a cafe, you can always find healthy alternatives out on the road. Here are my go to meals if I am out at lunch.
 
SUBWAY:
Turkey, ham, cheese, veggies on wheat. (390 cals for 6")

 
 
 
MOES
Grilled chicken, veggies, black beans and light cheese. (440 cals)
 
 
Zaxby's
The blackened blue grilled chicken salad. No dressing, no bread, no fried onions (365 cals)
 
 
These are the 3 meals I go to if I didn't cook and don't feel like eating the cafe food.
Always remember you will feel way better after eating this stuff instead of a big greasy cheese burger and fries.

Surprise, You're 60 3 Weeks Early

My dad has never had a surprise birthday party ever. No matter what he has always figured it out. So since this year he is turning 60 we knew we had to do it. We started planning months ago but time flew by and before we knew it, it was time for the party. All the siblings stayed at my younger brother and his wife's house the night before so dad wouldn't wonder why we were all in town.
Then on  Saturday morning we woke up and headed to the church to finish up. I then got the text..... THEY WERE 2 MINS AWAY!!!
We quickly turned off the lights and gathered together.
Finally he walked through the door and was completly shocked. Seeing his face was worth every second of planning.
 

 We all said our hellos and shared hugs and just really enjoyed all being together.
 



 
You could tell the birthday boy was pretty happy.

 
My gift to him I have been working on for months and when I say months I mean months. I started telling people about my idea last August. Yes I am a little crazy about things being organized and on time. I reached out to some of his old and new friends and got them to write letters about memories they had with dad. I then put them in matching envelopes and put them in a lantern (it will go great at the Florida house).
 I talked to mom yesterday and she said dad was sitting on the porch in the sun reading all of his letters and just loving them.

 
We then enjoyed some yummy food and fellowship.


 
This little man sure does enjoy food.

After our bellies were stuffed we all gathered in front of the projector screen to watch the slide show we made for him. There were defiantly some pictures in there that brought back many memories.
 
 
And what is a birthday without cake?

 
Mom worked so hard to find a pirate cake and it ended up being perfect.

 
Even though sometimes it is gross, I love how lovey dovey my parents are.

I was glad that the preacher and his wife (my second family) got to make it. He will be marrying Shaun and I in June.

Afterwards we all headed back to my parents and got in comfy clothes and just hung out the rest of the evening.

 
The next day Shaun and I headed back to the Upstate to do a little babysitting.

 
I was in baby heaven.

 
Everything this weekend was perfect and I would have not changed a thing. So lucky for my family and especially my 60 year old daddy :)

Breakfast: omelet with spinach and mozz cheese.
Lunch: grilled chicken wrap with pickles
Snack: pop chips (100 cals)
Dinner: Thai - chicken and veggies
 
Day 5:
Breakfast: 2 eggs with wheat toast and jelly
Lunch: wheat chicken quesadilla with corn
Snack: popchips
Dinner: side salad with ginger dressing, 6 inch subway club on wheat (ham, turkey and roast beef) and sun chips
Dessert. small bowl of dark choclate pecan special k cereal with light almond milk. ( I was super hungry last night)
