Yes, it is true, I am 27

Today is my birthday and it is a little bitter sweet.  Here are just a few reasons I am happy today!

1. I am thankful that I am still around to celebrate another birthday.

 

2. I am very lucky to have my wonderful family that mean the world to me.
Especially my new little nephew Carter!!
 

 
3. Words can't express how lucky I am for the bf
 
 
4. My best friends keep a smile on my face and warmth in my heart.
 

 

 
5. I am healthier and more active now, than I was when I was 20
 
 
6. I have two wonderful pets, Motor and Amelia (you can't see Amelia but she is a hermit crab)
They are pals!!
 
 
 
and last I am just pretty happy I don't look like this yet :)
 
 
 
Day 105:
Breakfast: 2 scrambled eggs and fresh strawberries
Lunch: grilled salmon, squash, zucchini, green beans, tomatoes and peppers
Snack: almonds

Skinny Aunt Kay's Squash Caserole

 When I was younger we always had Thanksgiving dinner at my dad's side of the families house in Alabama. I looked forward to this time every year. There is just something about them that is so warm and loving. That and also there was always so much food. I mean literally we would eat the whole time. But my absolute favorite thing that we always had was my Aunt Kay's squash casserole. This casserole would just melt in your mouth. I would have to tell myself to quit eating it because it was that amazing. So after many years she finally gave up all her secrets for this amazing casserole so now my mom can make it. But as you can probably guess it is not in the least bit low fat or low carb. Nothing that good could be healthy. I tried to always tell myself, but wait it has a veggie in it, who was I trying to kid. So I have set out to find a new, healthy recipe to copycat my Aunt Kay's recipe but without adding inches to my hips.
 
GET READY!!
 
What you will need
2 cans of squash
1/2 package of non fat greek yogurt
1 cup fat free cheddar cheese (next time I would use reduced fat cheddar chesse)
1 egg
1 teaspoon minced garlic ( I changed it to fresh garlic after I took the picture)
1 teaspoon seasoned salt
sriracha hot sauce (optional)
 
Preheat your oven to 350'
 
Start by mixing all the ingredients together (make sure you drain your squash)

 
then pour in oven safe dish (make sure you spray your dish so that it doesn't stick)

 
Cook in the oven for about 20 minutes or until you put a knife through the middle and it doesn't stick.
Then add cheese to the top.

 
Let cook for another 20ish minutes or until golden brown on top.
All together mine took about 45 minutes but my oven isn't the best, so just keep an eye on it.

 
Then once it is complete, get ready to be in low fat /low carb heaven. Now I like mine gooey so most people would probably cook theirs longer. You be the judge :)
 
Afterwards I was still in the mood to make some yummy treats. So I made some, On the Go Balls and Skinny Turtles
 
( banana, oatmeal, reduced fat peanut butter and dried cranberries to top)
 
 
(dark chocolate, and oven roasted almonds)

 
 
 
Day 104:
Breakfast: 2 hard boiled eggs
Snack: 2 On the Go Balls
Lunch:Turkey Sausage and Broccoli Alfredo & Skinny Aunt Kay's Squash Casserole (small portions)
Snack: mixed nuts
Dinner: Thai night woohooo. bring on the spicy chicken with borccoli and cabbage:) of course no rice
 
 
Day 46 no diet mountain dew
 
 
 
15 till ultimate goal. (my birthday is this weekend but starting Monday time to kick it in full gear. I will be starting a clean diet for the last 10 days. This will consist only of fresh veggies, fruit, lean protein, non fat yogurt(for morning smoothies) and eggs.

Miss Motor

Hi everyone my name is Miss Motor. I talked my mommy into letting me introduce myself because I was missing out of all the fun. Now I have to admit my mommy is very protective of me. It is probably because when she found me I wasn't in the best shape. I decided one day that I was cold so I hopped into Mommy's engine and decided to stay while she took a 45 minute ride to work. Let me tell you it was a hot, a very miserable ride, not the best idea I ever had. But it did lead mommy to finding me and taking me in. After that day I have been spoiled rotten since so I guess my plan worked. So I wanted to share some pictures of me. What do you think could you give my cute face up?

Day 103:
Breakfast: 2 eggs
Snack: 2 tablespoons of peanut butter
Lunch: turkey sausage and broccoli alfredo
Snack: 1 green apple
Dinner: turkey burger with lettuce, fat free cheese, ketchup and hot sauce then Skinny Aunt Kay's Squash Casserole
Dessert: 4 small Skinny Turtles

Turkey Sausage & Broccoli Alfredo

Growing up I was never a fan of any type of Alfredo which is a good thing because it is very high in fat. Now that I have gotten older my taste buds have changed, I have had Alfredo a few times and didn't hate it. So I thought I would make a recipe for all those Alfredo lovers out there who don't want to expand their waistline.
 
What you will need
1/2 cup skim milk
2 teaspoons of olive oil
1 cup of fat free chicken broth
1 package of fat free greek yogurt
2 cloves of minced garlic
1 package of frozen broccoli
turkey sausage ( I used 1 1/2 links)
1/2 cup of paramsean cheese
parmasean cheese to top
a squirt of sriracha hot sauce
salt and pepper
spaghetti squash
 
 
Start by cooking your turkey sausage first and then set aside
Go ahead and put your squash in the oven (350')

 
Then cook your minced garlic first on high for about 2 minutes (or until you can smell)
Then add your cup of broth and stir in with garlic
Cook for about 3 minutes
Then add package of greek yogurt and skim milk and stir together on high for about 3 minutes ( or until mixed)
Once mixed turn down to medium and add sausage and broccoli
Then cover and cook for about 15 minutes
Check occasionally and stir.
 
 
Once squash is cooked add to mixture.
Add let cook on low.
Once the juices have mostly soaked up you can,

 
serve! I plan to eat this for lunch for a couple of days so I put it in containers that I can grab  in the morning and be on my way. Fast and easy!

 
 
 
Day 102:
Breakfast: 2 eggs with turkey sausage
Snack: Apple Delight On The Go (step by step recipe tomorrow)
Lunch: Turkey Sausage & Broccoli Alfredo
Snack: 1 ounce of mixed nuts
Dinner: Salmon melt (canned Salmon, reduced fat cheese, 1 egg, sriracha hot sauce)

Another Busy Weekend

Like I had mentioned I went to my hometown again this weekend for the brother's fiance's graduation, to see my girls cheer at the reunion game ( I have officially retired my pom poms ha) and for Mother's day. So I wanted to share some of the fun times I had.

Snack: beef jerky
Dinner: grilled chicken mexican salad
 
 
Day 100:
Breakfast: 2 eggs
Lunch: side salad
Dinner: grilled bbq chicken and grilled veggies
 
 
Day 101:
Breakfast: 2 eggs
Snack: 2 tablespoons of peanut butter
Lunch: I didn't have time to make my lunch last night so I ate in the cafe at work and surprisingly it was delicious. I had grilled chicken with pepper jack cheese, salsa and a little guacamole with cauliflower and mixed veggies.
Dinner: baked maui maui and steamed broccoli
Desser: tried out my new snack recipe Apple On the Go (will shar soon)
