Obsessions Friday

Guess what today is?

OBSESSIONS FRIDAY!

I only have a couple of things to share today but they are pretty fabulous.

I will start off with my favorite thing I found this week. My tribal, silk, drawstring pants. These are pretty much amazing. They are so comfy but dressy enough to wear to work. I will definitely be on the look for more.

Next up, my healthy choice for the week.

Lentil Chips. These are so delicious and really made me think I was eating chips but without all the calories. These babies are only 130 calories for 30 chips! I also saw hummus and quinoa chips that I must try. Maybe they will make next weeks obsessions post.

Last I just had to share this picture. This is motor, I rescued her about 1 1/2 years ago. She was actually stuck in my engine when I went to leave work. (hint, where I got her name) I was never much of a cat person but I couldn't give her up.

I am going out of town this weekend and clearly she doesn't want me to go. I will make sure to share all my weekend adventures on Monday. Have a great weekend blogger friends.

Love of Sushi, Special K Challenge & Sticking to Half Marathon Training!!

I love sushi but when I changed my eating habits I cut it out of my diet. Not that some sushi can't be healthy but I liked the very unhealthy kind. But last night I decided to treat myself and pick up some sushi on my way home from work. Although I wish they had ones with brown rice but I stayed away from the ones with fatty sauces on top and tempora and I did use low sodium soy sauce.

Yum! Such a good treat to myself.

Even though I reached my goal weight I have started to feel kind of blah lately. I have a bunch of events comings up and I definitely want to be looking my best. For example my wedding and the bacholorette weekend at the beach. I don't really have a number of pounds that I want to lose I just want to feel better, have more energy, make sure I am eating healthy and getting back in the gym. So I have decided to kick it off  by doing the Special K Challenge starting on Monday. I already love all of their foods so I am thinking this will not be too hard. I am going to start off doing it for two weeks and go from there. Each day I will share my meal plan and calories consumed. I am going to really be working hard these next couple of months to get myself exactly where I want to be for the big day.

For the next 2 weeks I will be replacing 2 of my meals with Special K.

Here are some examples.

1 Serving of Special K Granola, Low-Fat Breakfast Cereal contains 190 calories and has 6000 milligrams of protein, 9000 milligrams of sugar, 3000 milligrams of fat, 5000 milligrams of fiber and 0 milligrams of cholesterol.

There are 110 calories in a 27 chips serving of Kellogg's Special K Cracker Chips

There 110 calories in 3/4 cup of Special K Vanilla Almond Cereal

I am not much of a shake girl but there are 190 calories in the Special K Protein Shakes.

I am really excited because the past couple of months since I reached my goal weight I really haven't had any goals to reach so this will definitely push me to become an even healthier version of myself.

The next thing I want to share is something VERY important to me. The biggest goal I made for 2014 was to run a 1/2 marathon. I am very serious about this and will reach that goal. I figured since I am going to be kicking off my newer version of healthy eating on Monday why not start my half marathon training.  Below is the training schedule I am going to be going by. Wish me luck. I will need all the motivation I can get!

Countdown till 2 very important events:
85 days Bachelortte Weekend in Florida
127 days till the Wedding

My Best Mexican Recipe Yet!

So as you all know I am pretty obsessed with Mexican recipes. Mainly because you can change them up so much and it is pretty inexpensive. But last night I have to say I made my best Mexican recipe yet. This is a must try!

What you will need
ground turkey
1 cup quinoa
fat free cream of mushroom and chicken soup
cheddar cheese soup
black beans drained
taco seasoning
reduced fat mexican blend cheese
rotel tomatoes with cilantro
avocado

Start by preheating your oven to 350'

Then cook your ground turkey and quinoa.

Once they are cooked mix all ingredients except your avocado and shredded cheese.

I then poured in baking dish and topped with crushed red pepper.

After I let it cook for about 15 mins I realized that I needed to add 2 eggs.

I then let cook for about 40 mins. Checking occasionally.

Then I took out and added reduced fat cheese.

I then let cook until the cheese was fully melted.

Then let cool.

Once it was cooled. I added a slice of avocado to the top and enjoyed!!
So easy and yummy!

I have decided that I am ready to start my main goal for 2014. TO RUN A HALF MARATHON! Check out my training schedule and goals tomorrow!

A Waynesvilletastic Weekend

The fiancee and I headed to my hometown for the weekend and I was so excited because it had been a while since I had been home. There is something about the mountains that warm every inch of my heart,

Saturday morning after eating at Joey's pancake house we headed to the lake where my brother was doing the Polar Plunge. Growing up my family used to go camping with three other families and we used to have our own little polar bear club but I have to say the water was never frozen.
(they also had a costume contest, hints the ridiculous outfit below)

The great thing about this is that all the money that was raised goes to Kids in the Creek. Which I can remember doing when I was a kid. '

Everyone was was waiting around by the fire waiting on all the people to fill out all the paper work. I'm not sure I want to do something where I have to sign a liability form :) The fiance and I are actually thinking about doing it next year.

They were prepared :)

We were happy to be warm and dry!

Then it was time!

Ready SET GOOOOO!!!

Watching people's reactions were priceless.

My brother is pretty awesome I have to say!! Never a dull moment.

Of course he had all of his cheerleaders.

 The Bowen's never miss anything

After the Polar Plunge we headed to our venue for the fiancee to give his thumbs up. Which I am glad he did because my mom had already put down the deposit.

I showed him around and it really started to sink in.

We chatted about where we wanted things and places we could have the pictures taken.

It is so beautiful, everywhere.

WE ARE GETTING MARRIED IN 4 1/2 MONTHS!!!

HURRY UP JUNE 14th!!

That night we met up with all my girlfriends for some birthday fun!

“You have the rest of your lives to catch up together. After all, soul mates always end up together.  Girlfriend's are easily forgotten. Best friends stay with you for ever.”
Cecelia Ahern

We had a blast catching up, sharing stories and remembering the old times. The best thing about these girls is that you can not see them for months but when you are together it is like we were never apart.

Nothing will ever be able to change the bond we have!!!

MY MOH!

I have some good looking bridesmaids wouldn't you say? Here are just a few of them. Love them!!

The next day we headed back home and I was glad to just lay around in my pj's and watch movies all day!

I have some really exciting things coming up so make sure you check them out!
