You'llBeLookingGood Lasagna

What you will need
1 bag of spinach (frozen, cut leaf)
Ground turkey
Spaghetti sauce (low in sugar) I normally make my own but this works if you are in a hurry. My recipe for my homemade sauce is below.
1 onion
1 jalapeno
Skim ricotta cheese
Skim mozzarella cheese
Italian seasoning
Crushed red pepper
 
 
 
Preheat oven to 375'
 
Start by cooking your ground turkey, I add water to make sure I drain all grease from pan.

 
While that is cooking chop up your onion and jalapeno

 
 
After draining all the grease from pan add your onion, jalapeno, a tablespoon of Italian seasoning and crushed red pepper. Let cook with meat for about 7 to 10 minutes on medium.


Then add your sauce. At this point you might want to turn the stove down to low. Unless you want sauce spattered all over your kitchen.

 
While you have been getting the sauce ready you want to make sure you are thawing out your spinach. Once it is thawed lay onto what you will be cooking it in and layer it like it you would lasagna noodles. 

 
Then add your sauce

 
Then both cheeses (ricotta first)

 
Then repeat previous steps 

 
Then put in the oven for about 15 minutes. Remember meat is already cooked so basically you are warming up everything.

 
Then there you go, here is what I call You'llBeLookingGood Lasagna!
 
Recipe for homemade spaghetti sauce
 
  • 2 large cans of tomato's, plum
  • 1/4 cup oil, olive, extra virgin
  • 3/4 cup garlic
  • onion(s) - diced
  • 1 1/2 teaspoons salt
  • 1 small can of tomato paste
  • 1 teaspoon oregano, dried
  • 1/2 cup wine, dry red
  • 1 tablespoons vinegar, red wine
  • 1/2 cup basil, fresh - chopped
  • pepper, black ground - to taste
  • If you like it spicy I always add crushed red pepper

    Day 44:
    Breakfast: 2 eggs
    Snack: Tuna with light sour cream and hot sauce
    Lunch: You'llBeLookingGood Lasagna
    Snack: 2 tablespoons of peanut butter mixed with plain sunflower seeds.
    Dinner: You'llBeLookingGood Lasagna and corn on the cob
